Im curious if there is a feature that allows us to control what users see in the Child site administration nav. Is there any way to say, this account can see “everything” while these other accounts can only see “these”

If you need to control Admin Navigation on Child Sites, MainWP Branding Extension can help with a few items. If you need more advanced control, you may want to look into writing a custom code snippet where you can unsent menu items per user role. It should be fairly simple code that you can execute through the MainWP Code Snippets Extension.
